Irish moss

Irish moss, Chondrus crispus or carrageen moss, although it is not a true moss. It is a species of red algae. Irish moss is a relatively small sea alga, reaching up to a little more than 20 cm in length. Irish moss is common all around the shores of Ireland and can also be found along the coast of Europe.

Chondrus crispus is commonly used as a clarifying agent or finings in the process of brewing and in cosmetics. It is an industrial source of carrageenan, which is commonly used as a thickener and stabilizer.
