Carrageenan

Carrageenans are a family of linear sulfated polysaccharides that are extracted from red edible seaweeds, mostly carrageen moss. Irish moss, Chondrus crispus or carrageen moss, although it is not a true moss. It is a species of red algae. Chondrus crispus is a relatively small sea alga, reaching up to a little more than 20 cm in length. Chondrus crispus is common all around the shores of Ireland and can also be found along the coast of Europe.

Carrageenan is a vegetarian and vegan alternative to gelatin. Carrageenan is used as an inactive excipient in pills and tablets in pharmaceuticals, and as a thickener, or stabilizer in cosmetic creams.
