For 4 servings

INGREDIENTS:

4-5 carrots; peeled and sliced into strips
2 tbsp vinegar or juice from 1 lemon
1/2 tsp Red curry seasoning
a pinch of Sea Herb Salt Vivasan
1 1/2 tbsp Jojoba oil Vivasan or virgin olive oil
1 drop Lemon oil Vivasan

Gently combine carrots, vinegar /lemon juice, Red curry seasoning and Sea Herb Salt in a clean glass jar. Press the carrot mixture down. Cover with a cloth. Refrigerate at least an hour or overnight.

The next day:
Prior to serving Peruvian Carrot Salad Viva Peruadd jojoba oil Vivasan or virgin olive oil and 1 drop lemon oil Vivasan

TIP:
Before serving add 1/2-1 cup raisins (regular, golden, or a mix) and 1 large apple, (peeled or not, at your preference) cored and chopped
